    There is a little restaurant in Bangkok called Ban Chiang which I visit every time I'm there. It's quite an unexpected place considering its location, but it never disappoints. It's in an old Thai house, surrounded by loads of greenery and serves the most kick-ass Mussaman curry amongst other amazing dishes. Try to visit if you're ever in the city. For this dish You need to use a lower grade cut of beef and cook it for a long period of time to get the end result of beautifully soft meat in the flavorful gravy, but trust me it's worth it. Sweet potato replaces the white potato, and cashews replace the peanuts, so is it Paleo?? Hell yes! Team it with cauliflower rice for a completely Paleo Thai meal.

I'll admit it's pretty good for you as it is, so I'm not reinventing the wheel here, however I have changed up a couple of things which take it from healthy to super salad. I've removed the offending bulghur wheat and replaced it with raw cauliflower and pumped up the greens with the power of kale.

    Sweet chilli sauce is a bit of a staple that most of us would have in the fridge. This Paleo version can be knocked together in 15 minutes, is free from all the nasties in the shop-bought variety and will keep for a month. It will add a bit of oomph to otherwise plain grilled fish or stir-fried veg. It's also fantastic as a dipping sauce. Feel free to try this with garlic instead of ginger, or add some garlic along with the listed ingredients. Makes approximately 2/3 of a cup.

    I first tried dukkah many moons ago on a holiday to Sharm El Sheikh with my mum. This Egyptian nut, seed and spice blend has become very popular over recent years with trendy cafés and foodies worldwide, and there are loads of ready-made varieties on the market. But why buy ready-made when it's just so simple to make? You can use any nuts you like, try pistachios, cashews or almonds. Pine nuts would also work well. You only need half the amount listed here for the 4 lamb fillets, however I always find it so much better to make double when you have the time, so dinner is super fast to whack together next time around. Try it with chicken, salmon or pork, or sprinkled over roasted veggies.
