Obviously as soon as I arrived home I gave it a shot. Then it dawned on me, why just stop at two simple flavours of egg and potato when I can really pump some taste in there with a few more ingredients? You will need to use a frypan that goes from the cooktop to the oven. I used a cast iron skillet that was 30cm in diameter.

I know, I know, I hear you, fish can get awfully boring too. So it's HP to the rescue, saving you from another bland fish dinner. Pesto is super easy to make, and I have several pesto combinations in my repertoire that I will share with you guys in future posts. In this recipe I used dry sun-dried tomatoes which I soaked in water for 30 minutes, but I'm sure the jarred ones will work perfectly fine, just drain them off first.

Of course I couldn't resist! Being mad for condiments and sauces, I set straight to work turning them into chutney. I made this with the thought of it being a yummy side for a curry, but after tasting it, I think it would be awesome on some grilled fish or chicken too. Don't be daunted by the thought of making your own chutney. It's a pretty straight forward process and less time consuming than you think.
