In “Brisket Pho, a Viet Tex Story,” Gravy producer Jess Eng explores the emergence of Viet Tex, a cuisine created in recent years by contemporary Vietnamese-Texan chefs. These chefs grew up steeped in multicultural dining, eating Central Texas barbecue alongside family recipes.
